We are freeze drying Heavy Whipping Cream, 1/2 & 1/2 (half and half), Sour Cream, Cool Whip, Reddi Whip and my new favorite, Cream Cheese. You just never know what is going to freeze dry and what isn’t. I am fooled all the time. To my surprise, cream cheese does really well and if you add some freeze dried fruit to it, you can make a perfect bagel spread that never needs refrigeration. Sour cream also surprised the heck out of me. We also take a half and half cube that was freeze dried and make a short term storage version of coffee creamer.
