We have successfully freeze dried eggs and we have successfully freeze dried other sandwich spreads like tuna salad and chicken salad, but I have not tried freeze dried egg salad. A successful freeze dried sandwich spread is one that does not include mayonnaise. Mayonnaise will not freeze dry due to it’s high oil content. The best replacements for mayo is yogurt and cream cheese. To make a freeze dried egg salad sandwich, we used Greek yogurt. In this video, we also give an alternative egg salad or no egg salad using chickpeas and tofu.
