Freeze dried steak is probably top of the list for most freeze dryers. With the price of meat climbing at a runaway rate, having some freeze dried steak or freeze dried meat in storage is like money in the bank. Today I am cooking freeze dried steak four different ways and showing tips on how to rehydrate it. First we did a sous vide medium rare steak and then freeze dried it. Second, we did 2 raw steaks and freeze dried, one was rehydrated using the sous vide and one was rehydrated and grilled. The final freeze dried steak was grilled to medium rare and then freeze dried. For rehydration of the freeze dried steaks, I used a combination of the Avid Armor vacuum chamber sealer and a long soak in warm vegetable broth. Rehydrating with butter or oil was also very helpful in retaining the flavors we are all used to. All of the steaks turned out great, but cosmetically, they were not all equal. The flavor was all there though. Use this video to pick up some key tips and tricks to getting the most out of your freeze dried steaks.
