Kimchi is a delicious fermented vegetable mixture of cabbage, carrots, radish and others paired with spices. After 7 days of fermenting, it turns into a spicy condiment that is full of flavor and can be used for just about anything. Normally, kimchi is shelf stable when refrigerated for around 1 month, but if kimchi is freeze dried, it can be stored for 20+ years. Freeze dried kimchi also rehydrates well and even leaves it crunchy, which is something that does not happen often with freeze dried vegetables. It will rehydrate almost 100% to the way it was when fermented.
